When I go into calendar, say and open and appointment and open it for editing and go to the categories field, I see a list of categories that includes many things that I know are not associated to anything on my Pocket PC. If you're syncing with Outlook, how about deleting the unwanted categories there. I think it should then sync with WM5 and delete the unwanted ones there too. In Outlook (2003) go to Edit > Categories > Master Category List.
