I believe the default time for ActiveSync to keep items in Pocket Calendar is 2 weeks. You can modify this setting by performing the following:

1. HotSync your Pocket PC and wait for it to finish.
2. Right-click on Calendar and select Settings....
3. Modify the time that you would like to keep past entries in Outlook.
4. Click OK. Perform a resync if ActiveSync does not perform one automatically after you press OK.
