As srvctec said, just play with settings in your Notes, you should be able to start them in Draw mode & have recognition off (are you using Calligrapher or Transcriber ?)

A caveat is, the only way to print them would be by screen copy, AFAIK the "Print" command in Outlook doesn't work with ink notes. At least in 2003, don't know if they fixed it in Office 2007.

PhatPad is also good and it lets you print and costs some bucks.

If Notes work for you consider getting a copy of Inesoft CalcNote. It's a small program that has 2 tabs, one for a simple calculator and another for an ink notepad (saving in regular Note format). When maximized it hovers above any other application, and can be quickly minimized. The previous version is free (don't know if it's still available), the current version is a few bucks. It's very handy and may be just what you want.
