Nice choices, dont worry about the HDDs...a good 7200RPM drive is very quick these days.

Those are both good choices if you do want to upgrade in the future. Dont mess with RAID0, the gains are just not that big over a good fast drive.
ABF, raiding a bunch of 80gb drives in RAID0 would probably be slower or just equal to a good fast drive like one of the 640gb 7200RPMs anyways. All drives are not created equal, even with the same RPM and Cache sizes. Platter configuration and the controller in the drive itself can make a big difference in speed too.
The main thing a slow drive will bottleneck is load times, besides that it will not hamper gaming performance or anything like that as they load into memory.
