That's simple, mark them private and your staff should not see them. Create one and go check.
For the record, I don't share my calendar but people can still see if my calendar is busy through the free/busy connector. So no-one can se any of my indivdual items, just that there IS a calendary entry. That way whether it's personal or private they don't know what it is. But they can still see that it's busy so know not to book conflicting meetings.
AFAIK here's how it works.
Go to Activesync, Tools, Options, Calendar, Settings and enable Synchronize catergories only in the following catergories. Select all catergories except for Private (if it doesn't appear you don't have anything in that catergory. This is a custom catergory, you may need to create it.
Any items you create on the Axim put in a catergory called Private. They should not sync.
I'm going to give this a shot now so I'll let you know how it goes.
