The answer to your first question is that it cannot be done AFIK.
To your second question I assume that you are using the built in File Explorer and again, using this, the answer is the same - it cannot be done.
What you can do, however, is to use either Total Commander (freeware) or Advanced Explorer (costs about $2 or $3) as your File Explorer. Both allow you to extend the space available for the file name simply by moving the partition line at the top of the lower window as far to the right as you want. The file size and date and time are then simply scrolled off the screen but they can be seen by using the bottom scroll bar. Advanced Explorer does actually list the date but not the time (Total Commander lists both). It also lists the file attributes and Type.
