You can tell ActiveSync what type of items to synchronize, so to disable Outlook synchronization you would disable syncrhonization of Contacts, Calendar, E-mail, Tasks, and Notes. You would do this when prompted during the first time you put the PDA in the cradle (with ActiveSync already installed).
