In case anyone else is interested -- I have found the solution (based on something mentioned in passing for another issue elsewhere).

When specifying the outgoing server name, after the name, add a colon, then a space then the number of the port to use.

For example, for Earthlink, I have specified
smtpauth.earthlink.net: 587

It was also necessary to select that the server requires authorization and then to retype the login and password there (not to just use the same settings).
