Also, not quite PDA but Outlook - is there a way of setting a default new contact screen so I can set what order numbers are shown in and also set 'Home' addresses as the default! I am not a business!! :)

Try one of the commercial PIMs like Pocket Informant or Pocket Fusion. I have Pocket Informant and you can make all the choices you describe.
