I've only set alarms for tasks on a couple occasions and it's worked for me, but the global setting is a pain. Chris, I have to take issue with you here (in the nicest possible way).
On my version of AF (version 5 but was same on V4) you can definately set an individual time for a reminder on a task. You can have many tasks for the same day all with different reminder/alarm times.
For recuring tasks, if you delete the current instance of the task you will be asked if you want to delete 'all ocurances' of the task. If you select 'NO' then only the current task is deleted and the next in sequence suddenly 'appears' on the desired day in the calander.
As for 'completing' an instance of a task rather than deleting it, I haven't tried that. It may be worth a try. I'll give it a go later.
