I would say first export your mail file above all else if you want to keep what's there. I'm not sure about this now, but I really think it should be able to upgrade. Make sure you have exported that mail file somewhere away from office folders, then see if you can make it install to Program Files/Microsoft Office/Office, which should overwrite outlook 2000. It might be worth asking microsoft actually. I would also make sure you have anything you want to archive in outlook 2000 archived before you export that file because I don't know if it will do it for you after you upgrade. I would also fully patch office 2000 before you upgrade, so if you get in a situation later you can patch outlook 2002 after any 2000 patches.
Then again, uninstalling 2000 first might work fine. It just seems to me that there's a slight chance that you might end up not being able to save the data that you have in outlook 2000 if that file gets hosed up somehow. Maybe just saving that file and reopening it would be enough. Good luck.
