Outlook stores the mail where ever you tell it to.

There are actually three locations messages can be stored by outlook. The location is configurable by your user profile and your use of the client.

1. If you are connected to an Exchange Server and you are using the default configuration then mail is saved in the Exchange store.

2. If you like to save the mail locally it is saved in a .pst file (Personal Store).

3. If you use #1 above and are offline the mail is saved in an .ost (offline store).

Some people do move their .pst file to a remote server to insure proper backup of their mail.

You can change the location your mail is saved by editing your profile and change the "Deliver mail to" value. You can also specify the location of the .pst file in the profile as well.
