In pursuit of the truth (and to help anyone else) here goes
First I tried the revised dial string i.e *99***1 instead of the generic *99# (having checked on the phone that it was indeed APN 1. No effect - same result as described above.
Next I removed the advanced dial string that vodafone recommend (+cdgcont=1,"ip,"internet") and replaced it with z as suggested.
This time the phone woke up, announced it was connecting to GPRS and the connection became active in BT manager on the Axim. Connection is showing at five green blobs. :)
However that is where it stopped. PIE wouldn't browse (just sat there) and mail wouldn't connect and eventually timed out.
Having got this far I guess it must be something with the settings at the vodafone end i.e. it's letting me connect to GPRS but there is some access problem.
In the spirit of experimentation I also tried changing the number back to the generic *99#. It still got as far but then refused to do anything.
Finally because vodafone recommend changing your stop bits to 2, I tried them at 1, 1.5 and 2 - all had absolutely no effect (unsurprising as I think this is only relevant for a cable connection not BT).
I also tried it with and without a log in and password - again had no effect (i.e. got so far and sulked)
The saga continues....
Not being an expert in this, I am guessing the extra dial string commands vodafone suggest point towards APN 1 (+cdgcont=1). What does the 'z' do ?

The 'z' fixes a bug with the k700i. It just tells the k700i modem to reset itself to default settings before it attempts to dial. I found out about it in a k700i forum - can't remember where though. You could try putting both extra dial strings in - just make sure z is first because it resets the modem.
