Your best bet is:

1. Get CDRWin from this site. It's trialware, but it's still fully functional except that it only rips at 1x, which is still fast enough for most people... if the speed really bothers you you can pay for the full version.

2. Stick your PSX game in your CD drive and use CDRWin to rip it. It's the top middle button in CDRWin's little "popup menu," labeled "Extract Disc/Tracks/Sectors." Leave all of the settings as they are and pick a place to save the disk image. Once this process is done, you'll have two files: a .bin and a .cue

3. Download PocketISO from the FPSEce site and run it. Locate your .bin file, select .Z compression from the pulldown list, and check the box to rip videos if you want to do this. It will make the resulting file considerably smaller but obviously the game will not play videos (which can cause problems with some games). Then, click "compress ISO"

4. Once this is done, you'll have two more files: yourISO.bin.Z and yourISO.bin.Z.table - copy BOTH of these to a folder on your Pocket PC (FPSEce's ISO folder is best for quick access), load up FPSEce, select "Load ISO" and your game should show up in the menu. Start it up - if it works, great! If not, you'll have to look for help on the FPSEce forums... I may have made a mistake in this "mini guide," but as far as I remember I did it this way and it worked (for a while, anyway.)

Keep in mind that lots of people have had trouble with FPSEce and the x50 (as well as other models), so don't get your hopes up just yet...
