He's talking about not using HDD-based players at high altitudes (above 10,000 feet) because the lower air pressure could cause the hard drive head to "crash" onto the platter.
An airplane is a pressurized environment, so there's no problem with using an mp3 player there. (Unless there's a breach in the cabin, in which case you've got bigger problems anyway. :))

Your video has to be encoded to a format the PMC can use. Video encoding is a time-consuming process if you want decent results, whether the final product is going to be used on a PDA, a PMC, a laptop, or whatever.
