There are two ways to go about email on the Axim. One will just sync email between your desktop outlook and your axim. (Both email you have not seen and email you wrote but did not send) and the other is to just use the Axim to send and receive.
IMO, the first option is not worth much. There is a built in account in your Pocket Outlook called "Outlook E-Mail". All this account does is sync mail between your desktop outlook and your axim. You can adjust the settings in ActiveSync. For me, if I have mail in my desktop outlook there is no point in putting it on my Axim. I will just read it on my Desktop.
The second option is to set up a new account on your Axim using the same type of POP3 or IMAP settings you set up your desktop outlook with. Then you can send and receive email with your Axim just like on your desktop. Of course you need an internet connection to do this.
To get started you can go into Pocket Outlook and tap accounts.... New account. Then use the same settings as in your desktop outlook. If you can't get it to work let us know. There are some settings that can be a bit tricky sometimes. Good Luck~
