I'm not sure I'm understanding the question, but you shouldn't need to split anything. Basically the AV cables are the same thing that these Sedio cables are (unless I'm misunderstanding what these Sedio cables do)

The difference is, instead of going from the mini plug to RCA1, RCA2 and RCA3, the Sedio cables go to one mono plug (the microphone) and to one stereo plug (the headphones)

RCA1 ->becomes-> microphone jack

RCA2 & RCA3 ->become-> stereo headphone jack.

Again, maybe the Sedio plug does something I don't know about, but all you'd have to do is to take that A/V cable, and attach something like this (you'd need addtl gender changers for this one)

to two of the RCA jacks and plug your headphones in the end.

Then, with the remaining 3rd RCA end, you just get an RCA-to-mono mini jack for your microphone. Something like this (again, you'd need a gender changer for the RCA end, but this should give you an idea of how it would work)
