Sorry to hear your problems. It's difficult to see what could be going wrong. A couple of thoughts are:
1) Make very sure o2 have enabled GPRS on your account (if you were using GSM dialling before and have switched, it may not have taken effect on your account (assuming you asked for it). Did they send you a text message which you read, deleted, turned your phone off and back on again? Which service provider are you with (e.g. Carphone Warehouse - CPW 02, etc)?
2) There are a couple of phones out today (the Sony Ericsson S710i being one example) that do not actually have the ability to connect over GPRS via bluetooth. The function has simply been disabled. Unfortunately I don't know whether this is the case with the D500. What I would suggest is possibly getting a friend or colleague's phone and trying to set up a GPRS connection with theirs, and see if it works. You might also try taking the D500's battery out when the phone is still on, which resets the bluetooth cache, waiting 30 seconds, putting it back in and turning it on and trying to connect then.
3) Make very sure you have the correct dial-string command; any mistakes in this could cause failure.
