In Pocket Excel (on my Axim X5), open or create a workbook so that you are running Pocket Excel and can see all the menus at the bottom of the screen (New, Edit, View, Format and Tools).
If you open the Edit menu there is a "Password..." option near the bottom where you can specify the details.
I'm not sure how Excel Mobile differs, but if there is a File or options menu, it may be hidden in there. :approve:
