Or two cards. In a few rare cases, it's possible to multiplex video in such a way that it's possible with one, although I've never encountered that and it would decrease quality since the bitrate would have to be reduced to get them all to fit. (However, I have encountered some alternate audio streams and surround sound before, in addition to the standard MPEG stereo audio.)
Oh, and if you want to view two or more channels at once (as opposed to saving some while viewing only one), you'll need a video card with a lot of memory and enough speed to decode multiple MPEG streams.
