I believe there are inexpensive adapters that extract at least s-video and maybe also composite video from a VGA cable, since that signal is essentially already embedded in the pins of the VGA specification. Like this:

If you add that to a VGA presentation cable, like the one Dell makes, or the one chrismax is selling here on Aximsite, then that might be a cheap and effective solution. :)
