My first suggestion would be to read the first 3 stickies here in the multimedia area. They will give a good idea of how to do what you want to do for free. Another option is to check out this thread

Encoding dvds involves a lot of personal preference and you'll prolly want to try several options.
PS to ValkyrieRider, I just saw the Archos yesterday at Sharper Image. That is an impressive unit.
