I asked the developer team why was that and that's what they explained to me. Google.com was picking the language from the OS installed in the Opera Server. Actually, that is default behaviour for a lot of sites. I'm not saying that it isn't possible that opera uses some 'stripping' tool, however fact is that some (not all) browsers report the preferred language they would like to see. If a site (like google) supports internationalisation, you will get your own language version. That's exactly what happens here in firefox in NL.. I type google.com and get directed to a dutch page.
