I've found that the Axim's audio output is very weak. While listening to MP3s through some headphones, the audio got very fuzzy at higher volumes, as the Axim ran out of juice to feed the Sony studio headphones.

For your application however, the car stereo would be the amplifier and not the Axim, so I would think it would work ideally.
