...as it is greyed out. I can't go in and change the rules governing conflicts and how to resolve them. I have to cradle and sync first. If I changed something on the device during the day, come home, and want to sync it to, say, update Calendar, the new change may get wiped out on the device if ActiveSync is set to favor the computer in cases of conflict. Am I missing something? This problem has almost resulted in missed meetings. Thank heavens for memory between the ears. Any ideas?

That is a hard situation. What kind of conflicts are being deleted? I have selected for everything on my Axim to be preplaced by what is on the Server and I have had no problems with calendar events I enter into the PPC. The only thing I can think of is if you change a meeting; in that case, though I know it isn't the best solution, don't change it on your PPC, make a new meeting, then go back and delete the other one on your desktop when you get to it.
