I am having trouble with my Word now. When I try to open a new document it says "A problem with the document was encountered and it cannot be opened"

When I go to menu>options the field for a default template is empty.

I have a brand new Axim X51v with WM5. I looked on the CD that came with it but all it has on it is Activesync amd outlook. It doesn't seem to have Word or Powerpoint or Excel.

What are my options?

I don't think you have a problem with word itself, I get the same message sometimes. It has to do with the most recent file opened/closed and when you turned your Axim off and what document was open (I think if we figured out the answer we could communicate with aliens :). Try opening a document first (from file explorer) and then pressing 'ok' in the top right corner, exiting Word by ending its process in Settings > Memory. After that, try to open Word as a program and you shouldn't have the problem. (You could insert a soft reset in after the 'exiting Word by ending its process in Settings > Memory' if you wanted to.)
