on the today screen it only shows one appointment at a time. Is there a setting so I would be able to show all my appointments for that day?

Today plugin like Calendar Plus should do the trick - View MyPDA for the link.

Pocketbreeze that was recommended to you in your other thread will do a lot of what you want. It will show your appts on the today screen up to a month in advance, show tasks, show messages, show notes, show contacts, and special events in a handy tabbed interface. You can also have any Today Screen Plug-In run as a tab inside pocketbreeze in order to save screen real estate. It's one of the few programs I couldn't live without. Good luck with it.
