On the page http://www.xten.com/pocketpc.php Xten states that that they recommend Axim (among others) for use with their IP telephony software X-lite and X-pro. As the wireless network cf has to be used, is there any way to use another microphone (ie headset) than the built-in? Or do I have to use headphones for output and built-in microphone for input?

Yes, you have to use the buildt in mic...

I've only used Running Voice IP, but with that app, the sound was awesome both ways using normal earplugs and the buildt in mic.
