This goes right along w/ the question of how to change the highlighted areas of a calendar page I think. It's just not reasonable to assume everyone works 8 to 5.

I'm a little surprised that it doesn't sync with what you have configured in Outlook. Maybe there will be something rolling out to fix that in the near future.
Based on everything I have read since last night (no sleep again), It is hard coded into Pocket Outlook that the work week ranges from Monday through Friday and the work hours are from 08-17.00.
No go tell your boss that you can only work from 08-17.00 because Microsoft says so..
If it is very important for you to have the option to configure those type of settings you might want to go with a more full featured PIM than the Outlook, contact and calendar program that comes with PPC 2002.
Try Pocket Informant. I use it and have the options to start my day at any time I want as well as what day I consider the beginning of the week. Pocket Informant also has a number of other handy options.
Agenda Fusion is another popular PIM, but I have never used it and am not sure if they have the same configuration options.
I have a similar problem, maybe someone can help. I'm using Pocket Informant and I have many all-day appointments in my calendar. I set the reminders to remind me several days in advance. The problem is I get woken up every morning at 8am when a reminder goes off telling me I have an appointment coming up. Is there a way to set it so when a reminder goes off for an all-day appointment it goes off at like 12pm instead of 8am? I already set my Work Hours in Pocket Informant to start at 12pm but I still got an 8am reminder this morning.
