You just got to Start->Settings->Switch When the Navigator comes up, at the bottom of the screen is an up arrow, a down arrow, and a folder with an up arrow. Hit the folder with the up arrow until you get to the My Device category. You can then browse to your memory card, and the folder where you have the UIs installed.

Just thought i'd add that if you want custom made themes based on what you want, you may consider going to the Theme Request forum and posting what you want and someone will make it for you. Otherwise if you need or want any help just feel free to contact myself or one of the others at PPX. Raynne413 knows her stuff too. ;)
