You can select single, multiple, or all files.
I don't know about changing/creating file associations; haven't tried it.

I have both Total Commander (free) and Resco File Explorer 2003 (not free). I use both at different times. Resco has it's advantages - visually it's more appealing - but Total Commander can do more, at least as far as what I do. Much easier to move or copy files from one location to another.
I use Mapopolis for my GPS routing, and the Mapopolis map files must be installed in main memory when in use. Of course you don't want them in there hogging memory all the time, so I zip them into folders on my SD card with TC, then when I need them I just extract them into a folder in the Mapopolis program folder. When I'm done I just blow them away - the zip files are still intact on the SD card. This seems to be much easier to accomplish with Total Commander.
Resco boasts of it's ability to encrypt files, but I don't really have a need for that. Resco does come with a nice registry editor, however.

Apparently you can do this in Total Commander by changing registry entries, however there are some freeware programs mentioned here which supposedly do it much easier.
Correction:
Total Commander doesn't change associations through the registry; a freeware program called "Tascal Regedit" is recommended by the developer for this. The other freeware which a poster says is easier to use and doesn't involve any registry changes is Tillanosoft PocketTweak (
