When entering phone numbers for contacts, a default area code of (425) automatically gets entered. Is there a way to change this to my local area code, or to not enter anything?

Yes, from within Contacts select Tools ->Options. You'll see the area code field under Country/Region Settings. Just enter your local code there.

select options

area code is in there
