I've been using FlexWallet. Last week they were offering an incredible deal (saw it on this site). I bought the PPC version for under $4 and got the desktop version for free. (Don't know if that discount is still available or not). It is primarily for storing credit card and bank info, but also has templates for entering passwords, web site login info, PINS, etc. You can also create your own custom templates for just about anything you want to store.
You enter a single password to unencrypt the database that stores all the other sensitive data you want to keep. So I have a password on the Axim itself and then a password to access the FlexWallet data.
Of course there are numerous file encryption apps available to simply encrypt a Word, Excel, or Note document if you just want to "free-hand" some data entry and then protect it.
