Is there a way to show the next X upcoming calender events in the today menu? Also is there an easy way to get your calendar seeded with actual holidays?

Try Calendar+ to see multiple appointments.

If you go to Start->Settings->Today->Items and click the calendar, then go to options, you can switch it to show upcoming appointments, not just the next one.

They'll pick up on the next synch.

Jon, tried it on the PPC and it didn't help, but Calender+ really does the trick.
