PocketSnes works good with the Stowaway Bluetooth Keyboard. It has an almost imperceptible lag which only really affects the gameplay on intense action games, such as my all-time favorite Metal Warriors, but it's really really smal... I haven't used the keyboard in any other game than the SNES ones...

The fourway arrow keys will work for the fourway keys on the dpad. Enter is the same as the middle button on the dpad. This helps you use the kb for those buttons. I dont know how to map hardware button to the kb.

I forget which SNES emulator I was using, but I could remap buttons on my IR keyboard (I forget which brand) and play the game with it. It was a little laggy, but it worked. Maybe BT would be faster.
