Aside from "Easy" settings, almost every semi-serious chess program should allow you to set both the time, as suggested above, as well as the depth in plies. A ply is a move for one side. So if Black plays a move, that's one ply. If you set your program to 1 ply, 0-1 seconds thinking time, and make sure it cannot think on your time (this option is sometimes called 'pondering' or 'permanent brain' in chess software), you should get a pretty basic challenge.
As to a friendly program to use, the best freeware, rich in options, would have to be CEBoard, which has many options for the chess afficionado, but should also allow you the basics described above. If you want a more refined final product, then Chess Genius may be best, as it is better designed for the casual consumer IMHO.
