Texas holdem suggestion
I'm looking for a suggestion for Texas holdem that could be played against another nearby player ( got a couple long airplane rides coming up) or against the program - I've seen a online version but it looked like it could only be played via Internet.

There is one on www.birdsoft.net that works quite well. It has a career mode as well as a regular version. There is a trial version, so give it a shot.
