I would side with harley and suggest that you use a cheap and cheerful cycle odometer. They provide all the basic stats you are after - the down side is that you couldn't (as far as I know) upload that information to a computer for analysis. Who knows you might want to perfect your performance over a route in which case a full GPS solution would allow you to see your speeds (or should i be accurate and say velocities) over different parts of your course.
In terms of using a GPS on an bike, I would go for some solution that would be rugged (against knocks and you falling off) and the weather (rain, mud, grit etc). A hx4700 isn't the right tool. I have a Garmin Vista - I would think that it would do everyting you are after. You can even down load various types of maps to it to ensure you can find the pub at the end of your journey.
