I use DVD catalyst. I also use TCPMP to watch the videos. I initially used the trial copy of DVD catalyst that was offered and enjoyed the product so much that I purchased the full version. DVD catalyst is easy to use and produces good quality videos.:approve:

Iwent with Pocket DVD Studio after playing with a few others. Interface was nice and easy and easy to stretch movies to fill the VGA screen (where required)and easily modify sound quality.
I'd suggest you play with trials of it and the others mentioned to see which suits you best.
i havent personally ripped dvds to the pocket pc but in the tutorial above they use dvd shrink in the first step. I know it has an option to remove macrovision...

What I end up doing most of the time, is using a product for Mac and Unix boxes named handbrake. Just takes a long time, but the output is excellent.
Another vote for FairUse; although, I use the step-by-step approach when I convert movies on DVD to Divx on my PC. I just copy those over to a BIG SD or CF card ( the encode of KingKong was 3.2 GB ) and watch them on my Ax without any conversion. The Ax and TCPMP plays those DVD resolution encodes without any problem.
