Do you have an opinion as to which apps in particular to install?

Kinda depends on your purpose of its use.

Personal Information Managers (PIM):
Pocket Informant and Agenda Fusion. Both are excellent and base line goes down to personal preferences since features are identical. Only preference are the graphics and its ease of use for your taste.

Accounting:
Depends on what your desktop uses.

GPS/Mapping:
Mapopolis

MP3:
There are a handful from basic to graphically pretty to super playlist mangement etc..

Games:
Anything you like as far as genre of games.

Entertainment:
TV listings, Internet surfing, email, watching movies..

You get the idea..

Go to PocketGear or Handago dot com and check out all the software available for specific purposes. Most have free trials as well.
