I haven't received my Axim X51V yet...so I ask this question. Can you delete native programs? Word, Excel, etc? How about games that come with it or other silly programs that'll never get used and just taking up memory?

Nope. ROM is immutable. There may be something like JackSprat/JackFlash from the Palm world for the PPC world, but I've not found it.

Welcome to Aximsite. Congrats on your purchase. You will be able to delete some of the files associated with the program but not the program as you can with Windows programs on your PC. There is no add & remove programs option. Remember that you will get the program back everytime you hard reset the device. I have removed a few and also some of the help files which gave me an extra 5Mb. I hope this helps.
