How does one change the default sounds that I hear whever I select or touch the screenon an menu item?

Main menu, Settings, Sounds & Notifications, Notification tab.

Or if you want to add your own sounds, then just replace the wav files under Windows\ (using activesync) and you'll then be able to select them by the method Noisy Crow described.
