I would like to change the picture on the main screen, how do I do that, any help would be appreciated

You can set your picture as the background this way: (I hope I'm understanding your question)

Start > Settings > Today > Use this Picture as the Background / Browse button > select your picture from the folder of your choice using the menu options

Note that The Start > Settings > Today path also brings up options to change the overall theme of the today screen--the basic background color and the text on the today screen. The photo option is there at the bottom of this page of options.

Other programs give you options to use a photo as the background, too, if you have them or are interested in using them. I use Resco Photo Viewer, and it has a nice option to place a picture in the background and set the degree of transparency.

You can also just go to your 'My Pictures' folder and tap and hold on the picture that you want to use as the background. This lets you control the "see-throughness" of the picture. haha, sorry but I couldn't think of the right word. Hope that helps.
Also, you can go to Start>Programs>Pictures and Videos>tap the picture you want to use as background>Menu>Set as Today Background...

Incidentally, a fine free program that you can use to make your own themes or simply replace your wallpaper for potrait/landscape modes is ThemeGenCE. It's freeware and supports quite a variety of landscape and portrait configurations.
