I currently find the 3 backgrounds for the "Today" page do not provide enough contrast for my eyes to clearly read my appointments. Are there backgrounds available that are brighter, and less busy?

You can load your own images from the Today-Appearance page, and they will be automatically fogged to a light color for decent contrast. If you load a solid color image, you can get whatever you want.
To get full control of the screen, you need MS Theme Generator, with which you can pick an image and set the fog, brightness etc to your tastes. Also set color of nav bar, command bar, and some text colors.

Pop on over to Pocket Themes. They have more themes than you could ever see. I'm sure one or more will be what you're looking for.
