Should know one of the popular Vietnam dishes that I'm sure you would enjoy is a delicate mix of traditional Asian cuisine and the sophistication of the French Colonial chefs who knew what it was about the far east that tantalised their taste buds.
Often it is 181 on the menu, but you can just ask for it by name if you like, everyone knows it, Sumyong gai Au jus.

Should know au jus, when used in it's correct sense and not the Amriknisd version, means meat with it's own juice and being such a natural flavour, condiments actual detract from the gastronomic experience.

Should know that a Maitre d' could not have put it better. It might have been better presented of course but taste wise I'm sure I wouldn't have noticed a difference.

Quick question about this au jus business, what happens if the meat being cooked does not come with it's own juices? Can surrogate juices be sought or is there a synthetic version for just this scenario?
