KLappDOgg was nice enough to send me some samples so I'll let you know my thoughts(thank you btw)
First up is prime rib dinner. I can't remember the last time I had prime rib so I can't say if it tastes like it or not. The flavors were subtle; a little bit of sweetness and another flavor I can not describe but it goes okay with the sweetness. Overall I would give it a 7/10.
Next up is the classic flavor. The first thing that popped out was that the flavors were a little more intense. The vinegar was noticeable, I don't like vinegar but you guys have managed to leave out the bitterness so thumbs up on that. Overall I would give it a 8/10.
Finally Pepper Grinder(I love pepper btw). It was peppery, not overly peppery to the point where it turns you off but enough to get your attention. I also got a little bit of sweetness. I liked this one the best. 10/10
Other stuff: I'm used to the cheap jerky(forgot the name but it comes in the yellow and red packaging) so this jerky was tough to chew, to the point where my jaw ached. It's best to eat in small bites rather eating half/whole at once. I'm also used to the juiciness of the cheap jerky, you have to work to get more juice out of the greenlightjerky.
Overall I liked the jerky but don't see myself buying it on a regular basis because of the toughness. If you can work on that aspect I would seriously reconsider. Flavors were great, no issues there.

I love the toughness of your jerky. That's what jerky is supposed to be. If you decide to make a squooshier version, please make it as just another flavor--keep the tough ones as product choices too.

Flavor balance is one of the most important things in regards to crafting our product. Its one of the things that makes our jerky unique.
Another thing that makes Green Light Jerky so unique is the fact that we use NO thickening Agents, Added Sugar, Liquid Smoke or Nitrates/Nitrites. NO added MSG Either.
If you look at the back of the Red and Yellow bag, I bet you will see more than a couple of those items I just listed. I hope, honestly, that I am wrong, but I doubt it.
Those ingredients have a dramatic effect on the beef and its final texture. They make it: sticky, break apart, increase the weight of the meat, change the color, change the flavor of the beef, etc.
By keeping all that stuff out, we preserve the meat natually.
That is why our jerky has a beefier(is that a word) taste.
Its why our jerky is not Red.
Its why our jerky still has a meatiness too it.
Also you can be confident that you are not putting anything in your body that you dont need to.
Our goal is NOT to put a jerky out there that will sit on shelves for years until its sold. Our goal is to craft the finest jerky snacks available, so that they NEVER last long on a store shelf.
We have found, through our experience, that each recipe imparts a different texture on the jerky. So dont be afraid to try the new stuff when it comes out.

typical recipes are usually
soy sauce, worcestershire sauce, some chiles or what have you.
just experiment with flavors you like. its better that way. dont use too much soy or worcestershire sauce or it will be too salty or fishy.
Also I would not use those mixes as most of them contain nitrates or msg. Just search the internet for recipes.
Maybe try alton browns jerky recipe. I personally did not like it and that is what inspired me to start tinkering and now Ive got USDA approval.

KLappDOgg--congratulations. And I'm proud to see that I was in on the ground floor--or maybe the first floor.
I haven't ordered more jerky because I may have developed high blood pressure and am fiddling with my diet. Miss it, though. That had become my lunch of preference.
Thats terrible. I hope its not true.
Our jerky is lower in sodium than most jerkies, but the nature of jerky is dried meat usually preserved with salt. After we get turkey jerky and some other flavors, ill tinker with a very low sodium version.
