Workstation Graphics cards, such as a FireGl or Quadro focus more of CAD Rendering and industrial jobs, such as rendering a drafting application. Compared to a traditional consumer graphics card, which is for more traditional uses such as playing a game. Not to say a workstation card can't play games though, they can. A normal card can also run "workstation" apps, perhaps not as well though. If your looking for a card, it would be best to look at them individuallly rather then just "workstation vs traditional"
Another big factor is that Workstation cards have more DVI or VGA outputs for hooking up to more monitors in workplace enviroments. If your looking for alot of outputs you'll want to check out Matrox, who you've probably heard of. If your looking for a workstation card, check out the ATI FireGl, but thats just my opinion.
