I'm trying to use my Verizon v710 as a DUN modem on my X51v running WM5.
When I try to pair the two, they find each other fine, but it does not show any services available, so when I click finish, the partnership dissapears.

Good news!!! A work-around has been found to use the V710 as a dialup modem for the X51v! :)
See this thread, about half way down the page. It involves using a registry editor (Total Commander works), so proceed if you are comfortable editing your devices registry.
