My Documents folder
I noticed that Windows Mobile 2003 on my iPaq2210 stores the files going in the My Documents in ROM. I created a My Documents folder on my SD card. Does anybody knows of a way, hack to change the default path (which must be writen somewhere) to link to my new folder on the SD card?

I believe there is a registry tweak for this but don't know of one of the top of my head.

You could try using a program like TweakUI or another tweaking program to change the default. Unfortunately, you would need to do some searching for one as I have not found one before.
