How do I remove items that are on that list that I dont want anymore?

To remove items you need to uninstall the program that added them.
And I don't think you can uninstall the ones which come with the system.
If you really really don't like them to show in this list you can edit the registery database to remove their entries.
you can find them under HLM\Software\Microsft\Today\Items\*
